Being unemployed takes a toll on peoples' attitude towards a lot of things, but I figured I wasn't going to go down that route. It has opened a lot of opportunities for me and with the time I have, I took advantage of learning how to cook real dishes - not just Ramen, banana pancakes and Spanish omelets though they are just as delicious ha! I was watching Giada (looove her!) and wanted to give this recipe a shot since I love salmon.
Salmon with Puff Pastry and Pesto
- 4 pieces of salmon (4-6 ounces)
- 4 pieces of puff pastry (should be larger than a piece of Salmon)
- 1/4 cup of pesto
- 1/4 cup of almonds
- 2 tomatoes, sliced [we didn't have any tomatoes]
I preheated the oven to 400 degrees. Lined the baking sheet with foil. Placed the puff pastry and salmon individually onto the baking sheets making sure they DO NOT touch each other. Sprinkled the salmon with almonds. Baked for 10 minutes. When ready to serve, placed the puff pastry on a plate and topped each with pesto then salmon. (If you do have tomatoes, top it over the pesto then follow with salmon)
Unfortunately, I didn't have tomatoes but they tasted just as good! Bon apetit!
